Any reason I can’t use infusion resin for a hand layup ?
It’s seems like the only difference is the viscosity and the cure schedule ?

You can, but because of the viscosity it tends to drain and pool all over the place. It isn’t wonderful, I’d vac bag it at the very least.
Problem with vacuum bagging infusion resin is you will push out too much resin in to the breather and leave the laminate lean. You might be able to control this by using a non perforated release film, or by varying the vacuum level. But always best to use the correct resin for the process at the end of the day.
