What we use in the classroom is laser sighted infered Temperature guns that you can find from racing, industrial and even art supply places or warehouses.
The Gel time (work time of PER) depends on cat. % used, room temp, moisture in the air, thickness of the casting or part layup (the thicker, the more reaction or heat is generated) and simular things.
Try taking 3x cups of 100 grams of PER, and cat. each batch with different % of cataylst (1, 5 & 10%) but time it from adding the Cat., until it starts to gel or “B” stage (this is the work time available for you) and when it is fully cured or “click hard”. The late “B” stage is when you can use a metal hooked knife to Green trim a F/G part in the mold just like cutting cheese.

PS: Once you get a temp. gun, mix a batch of PER up, lay a small sample laminate up (like 1 layer mat and 1 layer cloth) on something like HDPE sheeting and watch the different temps between the laminate sample and the excess left in the cup…laminate may get to only 80 degrees and the cup will extrotherm to over 300+ dregrees! We keep a bucket or 2 of water back by the back gate to throw these into before they get “SMOKING”!
I got my temp gun on ebay because the screen was not working properly so I got it for $10 but I have found them at my local autobody paint store for about $100
